Last night's dinner was a fabulous find on Tasty Kitchen (http://thepioneerwoman.com/tasty-kitchen/). My brother apparently had never had eggplant before, so I decided he needed to try it! The recipe is basically penne, eggplant, and zucchini (obviously) and tomato, basil, and feta. To make it healthier, I would suggest whole wheat penne and reduced fat feta.
It's definitely a keeper! Plus, it made enough for dinner tonight...so I get the night off :)
