I think the theme for this summer is trying recipes I found on Pinterest during class last year. So, yes, this is another Pinterest find. And, luckily, we already had everything needed to make it. I don't know that there's a lot of redeeming "healthy" value here (soda...cream of chemical soup), but this is very delicious and easy. I used brown rice instead of white and had sugar snap peas on the side...so that makes it pretty healthy, right? The chicken turned out perfectly moist, and the rice was wonderfully creamy. It's a keeper! And, I'm so glad to tell you, this is a slow-cooker recipe. I love slow-cooker recipes. Of course, the family thoroughly enjoyed it too! Here it is:
7UP Chicken & Rice
Ingredients:
3 lbs boneless, skinless chicken breasts (frozen)
1 can of cream of chicken soup (10.5 oz)
1 can of 7UP or Sprite (12 oz)
1 c rice (Minute rice, brown or white)
1/4 c chicken broth
Place chicken breasts in the bottom of your slow cooker. Cover with soup and 7UP. Cover and cook for 2-3 hours on low (I did 2). Add rice and chicken broth and cook for 2-3 additional hours until chicken is cooked thoroughly (it just took 2 for me). Keep warm until ready to serve. Enjoy!
