Today has been CRAZY. Like I didn't eat "lunch" until after 2, but I'm not entirely sure you could actually call it lunch. Honestly, if I hadn't already planned this dinner, we would have had like take-out or something. This recipe is from a 2005 Kraft Food & Family magazine. I cut the chicken into strips and thoroughly cooked it in the skillet with lemon pepper seasoning and fat-free Italian dressing. Then, I added chicken broth, broccoli florets, red pepper, matchstick carrots, and zucchini (not in the recipe). Brought that to a boil and added two cups of uncooked brown rice. Brought that to a boil, reduced the heat, and covered to let sit for a while. Some point after this, I decided to finish off a bottle of white cooking wine, so I added that in there. Topped it off with Parmesan. Delicious!
