Cheater's Chicken Fajitas

Okay, so you know that Wednesdays are CRAZY at the house, but even more so this week... This was actually last night's dinner (tonight will be leftovers, sorry).  I'm calling this dish "Cheater's Chicken Fajitas" because there really isn't much to do at all to get it together.  I used pre-cooked (frozen) fajita chicken strips and a frozen mix of peppers and onions.  So we just heated those up on the stove and put some kind of frozen southwestern corn thing in the microwave.  Obviously, there were tortillas, sour cream, salsa, and cheese involved, but nothing really special.  They were good though!


  My brother's birthday is in one week, so I asked him what I should make... His reply: "chicken poppyseed casserole, biscuits, and cheesy potatoes"...  We'll see about that. Not much color there!
