Tonight's menu was salsa chicken, brown rice, and whole green and yellow beans with baby carrots. This meal is super easy! I just threw some chicken breasts in the crock-pot with salsa (we usually use some kind of pineapple something or another, but any kind works) just before noon and turned it on low. Six hours later we had wonderful, tender, juicy salsa chicken. I used Minute Rice and the steam-in-the-bag vegetables.
After Bible class, we had double fudge pudding (Jell-O instant mix) with sliced strawberries and sugar-free Cool Whip. Yum!
I'm still at war with a wall shelf. If it ever gets up, I will be sure to share it with you!
