Orchard Chicken Salad

After a few days of "heavy" foods and eating, I decided that we needed something light and refreshing for lunch today.  The salad base is a "spring mix."  I added red onions, pecan halves, gala apples, and grilled chicken.  It was very refreshing.  I must say, though, that salad is very frustrating to eat.  I feel like it takes a long time.  Like getting the lettuce-y stuff on the fork just right, so it doesn't get dressing all over your face.  Am I the only person with this problem?  Or trying to get two or three different things on the fork at one time so you're not just eating grass by itself.  As time-consuming as it was to eat, it was fast to make.  And, really, it was tasty! 






 After lunch, I decided it was time to get the entertainment center in the house.  I'd waited long enough.  It was time to get things organized.  (We waited so long because we thought we were going to have to have some guys come over and move the thing, but never got around to asking anyone.)  Anyways, our efforts today prove that P90X works.  Chris and I moved the thing (about 6' wide and a little over 6' tall, solid wood) all by ourselves.  (Although, once it we got it inside, we were able to put it on a piece of carpet to slide it--really helpful.)  We also had to move the credenza (that was containing our "entertainment") from the living room to Mom's room; it's smaller, but easily as heavy.
